A brown sugar cinnamon cake is a layered sponge made with brown sugar and spiced with cinnamon, which gives it a soft, caramel-like flavour. Ours, the Cannelle Brûlée from our Autumn Noir collection, is filled with cinnamon buttercream and finished with a caramelised cinnamon sugar crust, inspired by the crisp top of a crème brûlée. Cannelle is French for cinnamon, and our couture take brings warm caramel flavours with a little crunch.

What’s in Our Brown Sugar Cinnamon Cake
