The Sponge
At its foundation is a traditional Japanese shortcake sponge. It is soft, fine-crumbed and delicately structured, lighter than a classic European sponge and designed to absorb cream gently while holding its shape.

The Mango and Cream
Between each layer, ripe mango is folded through Mooies’ Chantilly cream, whipped to a soft, silk-like consistency and lightly sweetened so the fruit stays the focus. The mango brings natural sweetness and brightness, and the cream provides balance.

Then: fresh mango sweetness, clean and juicy
Finish: light Chantilly cream, smooth and restrained
