What is a matcha chiffon cake?

A matcha chiffon cake is a tall, exceptionally light sponge made in the Japanese chiffon style and flavoured with matcha green tea. Ours is finished with matcha Chantilly cream for a soft, balanced cake that is much lighter than a traditional sponge.

What matcha do you use?

We use ceremonial-grade Japanese matcha in all Mooies matcha cakes. It gives a smoother, more rounded flavour with natural umami, without the harsh bitterness of lower-grade matcha.

Is it very sweet, or bitter?

Neither. The sponge and cream are lightly sweetened, and the matcha brings a gentle earthiness rather than bitterness. It's a good choice for anyone who finds most celebration cakes too sweet.

What's the difference between your Matcha Chiffon Cake and Matcha Wobble Cake?

The Matcha Chiffon Cream Cake is a tall, airy sponge finished with matcha cream. The Couture Matcha Wobble Cake is known for its signature wobble and a different texture altogether. Both use ceremonial-grade Japanese matcha.

Do you deliver outside London?

Yes. The cake is handcrafted in London, and we deliver across London and to the rest of the UK by chilled delivery. We don't currently ship this cake internationally.

Is it suitable for birthdays and events?

Japanese Matcha Chiffon Cake

The Matcha Chiffon Cream Cake is a celebration of lightness: a cake defined by air, balance and restraint.

The Chiffon
Made in the Japanese chiffon style, the sponge is exceptionally soft and feather-light, designed to melt on the palate rather than crumble. Its structure is delicate yet precise, giving height and softness without heaviness, the hallmark of true chiffon.

The Matcha
We use ceremonial-grade Japanese matcha in all our matcha cakes. It gives the sponge an earthy depth, subtle bitterness and natural umami. The matcha is used with restraint, so its flavour unfolds slowly and cleanly and never overwhelms the lightness of the cake.

The Cream
The cake is finished with Mooies’ matcha Chantilly cream, whipped to a smooth, cloud-like consistency. It is lightly sweetened and delicately aerated, so it complements the sponge rather than dominating it.
