What is an ube mille crepe cake?

An ube mille crepe cake is made from many paper-thin crêpes layered with ube, the Filipino purple yam. Ours is flavoured with ube halaya and ube extract, and handmade in London.

Ube is a purple yam from the Philippines, used in Filipino desserts for generations. It has a vivid violet colour and a gentle, nutty, vanilla-like flavour.

What does ube taste like?

Ube tastes gently sweet, with notes often compared to vanilla, sweet potato and a hint of nuttiness. It's mellow rather than strong, which makes it ideal for light desserts like crêpe cake.

Is ube the same as taro?

No. Ube is a purple yam, and taro is a different root vegetable with pale, speckled flesh. Ube is sweeter, with a much deeper purple colour.

Ube halaya is a traditional Filipino ube jam, made by slow-cooking purple yam with milk and sugar. We use it in our ube crêpe cake for a rich, authentic ube flavour.
