A carrot cake is a soft, spiced sponge made with freshly grated carrots, which keep the crumb moist and add gentle sweetness. Ours is baked with brown sugar, cinnamon, ginger, nutmeg and cloves, then layered with cream cheese frosting.

What Does the Mooies Carrot Cake Taste Like?

Warm and gently spiced rather than heavy. Cinnamon and ginger come through first, with nutmeg and a little clove behind them. Soft brown sugar gives a light caramel note, and the cream cheese frosting adds a tang that balances the sweetness. Pecans and walnuts give a soft crunch in every slice.

What Makes This Carrot Cake Different?

Three things. We use two nuts instead of one, so you get the buttery softness of pecans alongside the slight bitterness of walnuts. We add pineapple, which keeps the sponge moist for longer. And we use four spices rather than cinnamon alone, which gives the cake a rounder, warmer flavour.
