A Pandan Japanese Wobble Cake, also called a jiggly cake, is a very light soufflé-style sponge made with whipped egg whites and baked slowly at a low temperature, which gives it its famous wobble. Ours brings Southeast Asian pandan into this Japanese style, for a gently floral, vanilla-like flavour that’s rare in the UK. We bake our couture take for about two hours and let it rest before unmoulding, so it keeps its height and softness.

What Makes a Japanese Wobble Cake Wobble?

The wobble comes from the method. The egg whites are whipped and carefully folded into the batter to hold as much air as possible, then the cake is baked slowly at a low temperature with steam so it rises evenly without cracking. It’s then left to rest before unmoulding. The result is a cake that wobbles at the touch and has a soft, airy crumb.
