What Is a Pumpkin Spice Basque Cheesecake?

A Basque cheesecake is a crustless cheesecake baked at a high temperature, so the outside caramelises to a dark, almost burnt finish while the centre stays soft and creamy. The style comes from San Sebastián in Spain’s Basque Country. Ours adds pumpkin purée and warm pumpkin spice, layering cinnamon, nutmeg and clove through the cream cheese filling. Our couture take is lighter than a classic baked cheesecake, with a soft centre and a gentle sweetness.

What’s in Our Pumpkin Spice Basque Cheesecake

Baked at a high temperature, the outside develops a deep, caramelised, almost brûléed crust with a pleasant bitterness. Underneath is a soft, creamy, custard-like centre that melts in the mouth rather than setting firmly. Cinnamon, nutmeg and clove are blended right into the filling, adding warmth and balancing the richness of the cream cheese.
