A rainbow mille crepe cake is a mille crepe cake made with crêpes tinted in rainbow colours, so each slice reveals clean stripes of colour from top to bottom. Our couture take uses all the colours of the rainbow, with every crêpe cooked by hand and layered with light Vanilla whipped cream. It’s a birthday cake that looks bold and tastes light.
A mille crepe cake, from the French mille crêpes meaning “a thousand crêpes”, is made from many paper-thin crêpes stacked with cream. Japanese patisseries popularised it.
What’s in Our Rainbow Mille Crepe Cake
Each crêpe is coloured with food colouring before cooking, which gives the bright, even stripes. The crêpes are cooked thin and stacked by hand with light Vanilla whipped cream, with the colours running in rainbow order. From the outside, it looks smooth and simple, and the stripes appear when you cut it.
